1-Tanzania, Kokoa Kamili — 2022, Organic Created from Organic Direct Trade Trinitario type cacao beans from the Kokoa Kamili Cooperative. The cooperative works with approximately 1,500 small shareholder farmers in an area bordering the Udzungwa Mountains National Park in Tanzania. Tasting Notes: A very bright chocolate with notes of raspberry, cranberry and a tinge of lime. Bitterness and astringency are low but with fully balanced citrus acidity. 2-Uganda, Semuliki Forest Direct Trade — 2023, Organic Using Organic, Direct Trade Trinitario and Amelonado type cacao beans from the Rwenzururu Semuliki Forest region of Uganda. Wet cacao is purchased from over 500 small hold farmers, each with 1-2 hectares of cacao trees. In the afternoon of harvest day staff collect cacao from the farmers and pay the farmers cash on the spot. Tasting Notes: Earthy notes of coffee and caramel to start, eventually building into bright berries flavors with a long, pleasing finish. Pleasant bitterness with an absence of astringency.
